The Key to Happiness is…
Fresh baked bread.
And if you choose to experience this happiness…
Pain d’Olives
5 cups flour
1 tsp Herbs de Provence
2 tsp salt
4 tbsp olive oil
1 packet yeast
2 cups warm water
20 sliced black olives (or if you’re like me slice the whole can; save a few for the top if you like)
Mix all the ingredients except the olives
Make a soft dough and knead for a few minutes
Knead in the sliced olives
Form oval loaf, cover, and leave in a warm place until doubled
Sprinkle top with sea salt and whole olives
Bake 25 +/- minutes at 425 – it’s done when the top is golden brown and it sounds hollow when tapped
Enjoy!
P.S.: It’s delicious on its own or covered with ricotta and tomatoes.

I have herb de provence… I could make this…. well. Not in Texas. But I could in Ohio. That's where my herb de provence resides. In time though sweet bread, in time…..
